I did manage to bake two loaves of oatmeal bread this afternoon and it was fabulous! I took one warm loaf over to the neighbors just in time for dinner. I think they like me :)
Pizza and movie night turned out fantastic despite us agreeing we'll never let the kids eat dinner of any kind in the living room again. I made two crusts, one for me and my husband and one GF for the kids. I forgot that the recipe for our regular flour crust should be halved so we had something more like deep-dish but it was still really good! The kids LOVED, and I mean LOVED. They each had 3 pieces Friday night and more Saturday and Sunday for lunch. Plus I got to hear "Mom, you are a really good cooker" from my oldest, twice!
This week I am going to the farmer's market where I can get fresh eggs and organic produce. We missed it last week due to a late nap.

Eggshells are porous and refrigerator odors can change the flavor of the egg. The carton adds an extra layer of protection.:: To check whether an egg is fresh enough to use, put it in a deep container of cold water.
If it floats to the top, throw it out. When you break open a fresh egg and put it in a pan or bowl, the yolk will stand up from the white. The yolks from older eggs will flatten out and break easily.:: Fresh eggs from the grocery store can be stored in their original carton in the refrigerator for months.
Note: only do this when you are ready to use the eggs. Washing them is not recommend.

Eggs for commercial sale must go through processing that includes a "hot-bath". This hot-bath kills the egg's natural protective barrier and the porous shell can easily pick up bacteria. These methods result in eggs that must be handled more carefully including refrigeration.:: Eggs can also be beaten slightly and kept frozen in an airtight container for nearly one year.
Whites and yolks may be separated and frozen but yolks require the addition of salt or sugar (based on how you intend to use them) to be a managable consistency when thawed.Read much more here:
